Prepare the Crust
Preheat your oven to 325°F (160°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.

Form the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let cool.

Make the Cheesecake Filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the sour cream, granulated sugar, and vanilla extract, mixing until fully combined.

Add Eggs
Add the eggs one at a time, mixing on low speed after each addition until just combined. Avoid overmixing.

Bake the Cheesecake
Pour the cheesecake filling over the cooled crust. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven for 1 hour.

Chill the Cheesecake
Remove the cheesecake from the oven and let it cool to room temperature. Cover and refrigerate for at least 4 hours, preferably overnight.

Whip the Cream
In a separate bowl, whip the heavy cream until stiff peaks form. Sweeten with powdered sugar if desired.

Slice the cheesecake and top with the mixed berry compote and a dollop of whipped cream. Enjoy!
