Chop the onion, mushrooms, and red bell pepper. Mince the garlic and ginger.

Cook the Vegetables
In a large pan, heat the vegetable oil over medium heat. Add the onion and sauté until translucent. Add garlic, ginger, mushrooms, and red bell pepper, cooking for an additional 5-7 minutes until softened.

Add Chicken and Spices
Stir in the roast chicken, medium curry powder, salt, and black pepper. Mix well to combine.

Add Coconut Milk
Pour in the coconut milk and bring to a simmer. Allow to cook for 10-15 minutes, stirring occasionally.

Cook the Rice
In a separate pot, bring 2 cups of water to a boil. Add 1 cup of rice, cover, and reduce heat to low. Cook for 15-20 minutes or until the rice is tender and water is absorbed.
