Preheat the Oven
Preheat your oven to 425°F (220°C).

Mix Dry Ingredients
In a large bowl, whisk together the flour, baking soda, salt, and sugar until well combined.

Form the Dough
Make a well in the center of the dry ingredients and pour in 1 1/2 cups of buttermilk. Stir with a wooden spoon until the dough comes together. It should be slightly sticky.

Knead the Dough
Turn the dough out onto a floured surface. Knead gently for about 1-2 minutes, just until the dough holds together. Do not over-knead.

Shape the Loaf
Shape the dough into a round loaf and place it on a baking sheet lined with parchment paper. Cut a deep cross in the top of the loaf with a sharp knife.

Bake the Bread
Bake in the preheated oven for about 30-35 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.

Cool and Serve
Remove from the oven and let cool for a few minutes before slicing. Serve warm with Kerrygold butter.
