    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thick strips to create hand-cut fries.

    Soak the Fries

    Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

    Make the Yum Yum Sauce

    In a bowl, combine mayonnaise, ketchup, garlic powder, paprika, sugar, and water. Mix well and set aside.

    Make the Curry Sauce

    In a saucepan, combine coconut milk, curry powder, soy sauce, honey, and cornstarch. Whisk together and heat over medium heat until thickened. Add water to adjust consistency if needed.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Remove the potatoes from the water, pat dry, and fry in batches until golden and crispy, about 5-7 minutes.

    Season and Serve

    Remove fries from oil and drain on paper towels. Season immediately with salt. Serve with Yum Yum sauce on the side and offer curry sauce for an additional charge.
