Prepare the Tartar Sauce
In a small bowl, combine 1 cup of mayonnaise, 2 tablespoons of chopped pickles, 1 tablespoon of lemon juice, and salt & pepper to taste. Mix well and refrigerate until serving.

Make the Batter
In a mixing bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Gradually add the beer and stir until the batter is smooth. Let it rest for about 15 minutes.

Prepare the Fish
Pat the cod fillets dry with paper towels. Season them with salt and pepper.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Fish
Dip each cod fillet into the batter, allowing any excess to drip off. Carefully place the battered fish into the hot oil, frying in batches until golden brown, about 4-5 minutes per side. Remove and drain on paper towels.

Cook the Fries
While the fish is frying, prepare the frozen French fries according to package instructions in the oven or fryer.

Serve
Serve the fish and chips with the homemade tartar sauce and a splash of malt vinegar over the top.
