Scone Preparation

Preheat the Oven
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, baking powder, and salt.

Cut in Butter
Add the cold Kerrygold butter to the dry ingredients. Use a pastry cutter or your fingertips to cut the butter into the flour until the mixture resembles coarse crumbs.

Add Cheese and Scallions
Stir in the grated cheddar cheese and chopped scallions until evenly distributed.

Shape the Dough
Turn the dough out onto a lightly floured surface and gently knead it a few times until it holds together. Pat it into a circle about 1 inch thick.

Cut the Scones
Using a sharp knife or a pastry cutter, cut the dough into wedges or use a round cutter to make individual scones. Place them on the prepared baking sheet.

Bake in the preheated oven for 15-20 minutes, or until the scones are golden brown on top.
