Poach Apples
In a small saucepan, combine 1 cup of water, saffron, and a pinch of salt. Bring to a simmer. Peel, core, and slice the apples into wedges, then add them to the saucepan. Poach for about 10-15 minutes until tender but not mushy. Remove from heat and allow to cool.

Blister Tomatoes
In a skillet over medium-high heat, add 1 tablespoon of olive oil. Once hot, add the cherry tomatoes and cook until they blister and start to burst, about 5-7 minutes. Season with salt and pepper.

Prepare Gremolata
In a bowl, combine toasted hazelnuts (chopped), chopped parsley, minced garlic, and the remaining 1 tablespoon of olive oil. Mix well and season with salt and pepper to taste.

Toast Bread
Toast the slices of crusty bread until golden brown and crispy.

Assembly
On a serving platter, place the poached apple wedges and burrata cheese. Top with blistered cherry tomatoes and sprinkle the hazelnut gremolata over everything. Serve with the toasted bread on the side.
