Sweet Potato Fries

Preheat and prepare
Preheat oven to 425°F (220°C). If using an air fryer, preheat to 400°F (200°C). Line a large baking sheet with parchment paper or lightly oil it.

Cut fries
Trim the ends off the sweet potatoes and cut into 1/4- to 1/2-inch thick sticks. Aim for uniform size so they cook evenly (about 8–10 sticks per potato depending on size).

Toss with cornstarch and oil
Place cut fries in a large bowl and sprinkle with cornstarch; toss to coat evenly. Add the 2 tbs olive oil and toss again so each fry has a thin, even coating of oil and cornstarch.

Season
In a small bowl or over the fries, mix smoked paprika, ground cumin, garlic powder, kosher salt, and black pepper. Sprinkle the spice mix over the fries and toss until evenly coated.

Arrange for baking or air-frying
Spread fries in a single layer on the prepared baking sheet, leaving space between pieces (use two sheets if necessary). If using an air fryer, arrange fries in a single layer in the basket; you may need to work in batches. Lightly brush or spray the fries with the optional neutral oil for extra crispness.

Bake or air-fry
Bake for 20–30 minutes, turning once halfway through, until edges are crisp and centers are tender. For air fryer: cook at 400°F (200°C) for 12–18 minutes, shaking the basket every 5 minutes, until crisp. Exact time varies by oven/air fryer and fry thickness.

Finish
Remove fries when they reach desired crispness. Immediately season with a light pinch of extra salt if desired. Let rest 2–3 minutes so exterior firms up slightly before serving.
Marshmallow Dipping Sauce

Warm marshmallows
Place mini marshmallows and softened cream cheese in a heatproof bowl. Microwave on medium power in 20–30 second intervals, stirring between intervals, until marshmallows are melted and mixture is smooth. Alternatively, melt over a double boiler on low heat, stirring constantly until smooth.

Cool slightly
Let the sauce cool for 5 minutes so it thickens slightly. It should be warm but not hot when served alongside the fries. Transfer to a small serving bowl.

Optional finishing touch
For contrast, sprinkle a light dusting of smoked paprika or a few toasted marshmallow crumbs on top of the sauce, or drizzle an extra 1 tsp of maple syrup.
