Make quick pickling liquid: In a small saucepan combine rice vinegar, water, sugar, and salt. Bring just to a simmer, stirring until sugar and salt dissolve. Remove from heat.

Pour and chill: Pour the hot brine over the sliced fresnos to cover. Let cool to room temperature, then cover and refrigerate for at least 30 minutes (best 1–2 hours). Can be made a day ahead.
Sriracha Vinaigrette

Whisk dressing: In a small bowl or jar combine neutral oil, rice vinegar, sriracha, honey, soy sauce, lime juice, salt, and pepper. Whisk or shake until emulsified. Taste and adjust heat or sweetness as desired. Refrigerate until ready to use.
Crispy Cauliflower

Prep cauliflower: Break the head into bite-size florets (about 1 lb). Pat dry with paper towels — dryness helps crisping.

Make batter: In a medium bowl whisk together flour, cornstarch, baking powder, salt, and pepper. In a separate small bowl beat the egg with cold water. Pour egg mixture into dry ingredients and stir lightly until just combined. Batter should be slightly thick and cling to florets; add up to 1 tablespoon more water if too thick.

Heat oil: In a heavy skillet or deep pot heat neutral oil to 350°F (175°C). If you don't have a thermometer, test with a small drop of batter — it should sizzle and float up steadily.

Fry cauliflower: Working in batches to avoid crowding, dip florets in the batter to coat, letting excess drip off, then carefully add to hot oil. Fry 3–4 minutes per batch until golden and crisp. Remove with a slotted spoon to a paper-towel-lined tray. Keep fried florets warm in a low oven (200°F / 95°C) while finishing.

Combine sauce ingredients: In a bowl mix soy sauce, rice vinegar, hoisin, brown sugar, stock, sesame oil, minced garlic, minced ginger, and red pepper flakes.

Thicken sauce: Pour the sauce mixture into a small saucepan and bring to a gentle simmer over medium heat. Stir the cornstarch slurry (1 tsp cornstarch + 1 tbsp water) to recombine and add to the simmering sauce, stirring constantly. Cook 1–2 minutes until glossy and slightly thickened. Taste and adjust sweetness, salt, or heat.

Toss with cauliflower: Add the fried cauliflower to the pan with sauce off heat (or over very low heat) and toss gently to coat each piece evenly. Return to the oven briefly if you want extra gloss and warmth.
Finish & Serve

Plate: Arrange sauced cauliflower on a serving platter or individual plates.

Dress and garnish: Drizzle the sriracha vinaigrette lightly over the cauliflower (you want a bright, spicy-acid contrast — about 1 tablespoon per serving). Scatter pickled fresno slices over the top, sprinkle sliced scallions and toasted sesame seeds. Serve with lime wedges on the side.

Serve immediately so the cauliflower stays crisp. Leftovers: Store sauce-coated cauliflower and pickles separately in the fridge for up to 2 days; re-crisp cauliflower in a 375°F oven for 8–10 minutes.
