Crust Preparation
Make the Dough
In a small bowl, dissolve yeast and sugar in warm water. Let it sit for about 5 minutes until frothy. In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms. Knead on a floured surface for about 5-7 minutes until smooth and elastic.
First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Sauce Preparation
Prepare the Sauce
In a saucepan, combine fire roasted tomatoes, extra virgin olive oil, dried oregano, and salt. Simmer on low heat for about 10-15 minutes to allow the flavors to meld.
Assembling the Pizza
Preheat Oven
Preheat your oven to 475°F (245°C).
Shape the Dough
Once the dough has risen, punch it down, and roll it out to your desired thickness on a floured surface.
Add Sauce and Toppings
Spread the prepared fire roasted tomato sauce evenly over the dough. Tear fresh mozzarella into pieces and distribute on top. Drizzle with extra virgin olive oil.
Bake the Pizza
Transfer the pizza to a baking sheet or pizza stone. Bake in the preheated oven for about 12-15 minutes or until the crust is golden and the cheese is bubbly.
Garnish and Serve
Once out of the oven, top with fresh basil leaves. Let it cool for a few minutes, then slice and serve.
