Lil' Squeezy Juicy Ale is a pale ale brewed by Deschutes Brewery and has a blend of hops, malt, and citrus. This brew has an ABV of 5%.

Heat 3.5 gallons of water to 165°F (74°C). Add the crushed Pale Malt, Pilsner Malt, Carapils, and Crystal malt to achieve a mash temperature of 152°F (67°C). Hold at 152°F for 60 minutes, stirring gently every 10–15 minutes to ensure even conversion.

Mash

Raise temperature to 168°F (76°C) for 10 minutes to stop enzymatic activity (mash out).

Mash Out

Sparge with enough water at 170°F (77°C) to collect approximately 6.5–6.75 gallons of wort in the kettle (target pre-boil volume).

Sparge

Bring the wort to a vigorous boil and add Hallertau (0.5 oz) at 60 minutes remaining. Boil for the full 60 minutes.

Boil - Bittering Addition

With 15 minutes left in the boil, add Cascade (0.5 oz) and Citra (0.25 oz). Also add Irish Moss or Whirlfloc (1 tsp) at this time if using.

Flavor/Hops Additions

At 5 minutes remaining, add Mosaic (0.5 oz), the remaining Cascade (0.25 oz) and Citra (0.5 oz), plus the orange zest (1 tbsp) and lemon peel (1/2 tbsp). Stir gently to incorporate and allow oils to volatilize during the last 5 minutes of the boil.

Aroma/Hop & Citrus Additions

After the heat is turned off, allow the wort to cool slightly (to ~175°F / 80°C) and steep the late addition hops (and citrus if you prefer a brighter aroma) for 15–20 minutes for extra juicy aroma, then proceed to chill.

Hop Stand/Whirlpool (optional)

Cool the wort quickly to 68°F (20°C) using an immersion chiller or other method. Transfer the cooled wort to a sanitized fermenter, leaving behind as much trub as possible.

Aerate the wort by shaking or using oxygen for 30–60 seconds. Rehydrate or prepare the dry ale yeast per manufacturer instructions and pitch into the wort. Target fermentation temperature 66–68°F (19–20°C).

Pitch Yeast

Ferment at 66–68°F for 5–7 days or until vigorous fermentation subsides. After 3–4 days, check gravity; expect most activity to finish around day 5–7.

Primary Fermentation

After primary fermentation is mostly complete, optionally perform a diacetyl rest by raising temperature to 68–70°F for 24–48 hours. Then cold-crash to near 35–40°F (2–4°C) for 48 hours to help clarity (optional).

Conditioning

Sanitize bottles and bottling equipment. Dissolve priming sugar (3.25 oz) in 1 cup boiling water, cool, and add to bottling bucket.

Prepare Bottling

Transfer beer gently to the bottling bucket, mixing with the priming solution evenly. Bottle, cap, and store bottles at 68°F (20°C) for 10–14 days to carbonate.

Bottle

After carbonation, chill bottles for 24 hours and serve cold. Expect a pale ale with a bright citrus hop profile, a soft malt backbone, and approximately 5% ABV.

Serve

If using a Campden tablet to treat water, do so per instructions before mashing. Use Irish Moss or Whirlfloc in the last 15 minutes of boil to improve clarity. Sanitation is critical at transfer and bottling — sanitize all equipment that contacts cooled wort or beer.
