Coconut Chia Pudding

Enjoy a creamy and refreshing regular-sized strawberry shake made with ripe strawberries and smooth vanilla ice cream.

Flannel Mouth is a craft cider from Blake's Hard Cider Co in Michigan. ABV is 6.5%.

Combine 1 cup apple juice, 1/2 cup granulated sugar, 2 tablespoons light brown sugar, 2 cinnamon sticks, 6 cloves, 6 allspice berries and 1 tablespoon sliced fresh ginger in a small saucepan.

Make the syrup

Bring the mixture to a gentle simmer over medium-low heat, stirring to dissolve sugar. Once simmering, reduce heat to low and let steep, uncovered, for 8–10 minutes so the spices infuse and the syrup slightly thickens.

Remove saucepan from heat, stir in 1/2 teaspoon vanilla extract, and let the syrup cool for 10 minutes. Strain the syrup through a fine mesh sieve into a bowl or jar, pressing on the solids to extract flavor. Discard solids and reserve syrup. Yield: about 3/4 cup.

Pour 4 cups (about 32 fl oz) dry hard apple cider into a pitcher. Add 3–4 tablespoons of the prepared apple spice syrup to the cider, tasting as you go until you reach the desired sweetness and spice — start with 3 tablespoons for a subtle spice, 4 for more pronounced flavor.

Combine cider and syrup

Add 2 tablespoons fresh lemon juice to brighten the blend. If you want a slightly rounder, richer mouthfeel (optional), stir in 1 teaspoon maple syrup.

Gently stir once or twice to combine. Do not aggressively stir or shake — preserve cider carbonation and delicate aromatics.

Chill glasses in the refrigerator or fill with ice briefly and discard ice. Pour the assembled Flannel Mouth cider into two chilled 12–16 oz glasses (serves 2).

Garnish each glass with two thin apple slices floated on top and a cinnamon stick. Add a lemon twist if you like a slight citrus aroma.

Serve immediately to preserve carbonation and fresh aromatics. If preparing ahead for a party, mix cider and syrup but add fresh lemon and garnish just before serving.
