Crooked Tree IPA is from Dark Horse Brewing Company. This is a balanced IPA between hops, pine, and grapefruit. The finish is crisp and clean and the ABV is 6.5%.

Heat 4.5 gallons (17 L) of your water to approximately 165°F (74°C). Add grains to mash tun and dough in to reach a mash temperature of 152°F (67°C). Stir to eliminate clumps and ensure even temperature.

Mash-in

Hold mash at 152°F (67°C) for 60 minutes. Stir gently halfway through. Optionally perform a 10-minute mashout by raising the temperature to 168–170°F (76–77°C) to aid lautering.

Mash rest

Recirculate (vorlauf) until runnings are clear, then sparge with enough water to collect around 6.5 gallons (25 L) of wort in the boil kettle. Target pre-boil gravity ~1.050–1.055.

Sparge / Collect wort

Bring the collected wort to a vigorous boil. Start a 60-minute boil when wort reaches a full rolling boil.

Bring to boil

At the start of the 60-minute boil add 1 oz Centennial hops (bittering). If using Irish moss or Whirlfloc, reserve it for the 10–15 minute addition.

60-minute addition

With 15 minutes remaining in the boil add 1 oz Simcoe and 0.5 oz Citra. Also add Irish moss or Whirlfloc now (or at 10 minutes if using tablet).

15-minute additions

With 5 minutes left in the boil add nothing else (this recipe uses whirlpool additions instead of late 5-minute aroma hops), but maintain a gentle boil to sanitize.

5-minute addition

At flameout (end of 60-minute boil), turn off heat and cool the wort slightly to ~170°F (77°C). Add 1 oz Simcoe and 1 oz Citra to the kettle and stir to create a whirlpool. Let sit for 10–20 minutes to extract aroma without excessive bitterness.

End of boil / whirlpool additions

Cool the wort quickly to yeast-pitching temperature (around 66–68°F / 19–20°C) using an immersion or counterflow chiller. Transfer wort to a sanitized fermenter, leaving behind hop trub and cold break as much as possible. Top up with water to leave ~5.25 gallons (20 L) in the fermenter if needed.

Chill wort

Aerate the cooled wort by vigorous shaking or pure oxygen (recommended 4–8 ppm O2), then pitch the prepared yeast (rehydrated or a healthy starter if using liquid yeast).

Pitch yeast

Ferment at 66–68°F (19–20°C) for 5–7 days or until vigorous activity slows. Maintain stable temperature to avoid off-flavors.

Primary fermentation

After primary fermentation has slowed (typically day 5–7) rack or add hops directly to fermenter: add 1 oz Amarillo, 1 oz Simcoe, and 1 oz Citra. Leave hops on for 3–5 days for bright hop character; up to 7 days for more intensity. Avoid long dry-hop contact (>10 days) to reduce grassy/polyphenolic extraction.

Dry hop

After dry hopping, cold crash the fermenter to near 35–40°F (2–4°C) for 24–48 hours to help settle yeast and hop particles.

Cold crash

Boil 4 oz (113 g) corn sugar in 12 oz (350 ml) water for 5 minutes, cool and add to a sanitized bottling bucket.

Prepare bottling sugar

Siphon beer gently onto the priming solution to mix, avoiding splashing. Fill and cap bottles or transfer to a keg. Bottle condition at 68°F (20°C) for 10–14 days, then age cold for 24–48 hours before drinking. Expected carbonation: moderate (target ~2.2–2.6 volumes CO2).

Transfer and carbonate

If kegging, transfer to keg, purge headspace with CO2, and force-carbonate to 2.3–2.6 volumes CO2 at 10–12 psi (depending on temperature), then lager cold and serve.
