Roast the Tomatoes

Preheat the oven to 400°F (200°C). Halve the Roma tomatoes and place them on a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast for 25-30 minutes until they're caramelized and soft.

Sauté the Aromatics

In a large pot, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic. Sauté for 5-7 minutes until the onion is translucent.

Combine Ingredients

Add the roasted tomatoes and vegetable broth to the pot. Bring to a boil, then reduce to a simmer for 10 minutes.

Blend the Bisque

Using an immersion blender, blend the mixture until smooth. Stir in the heavy cream and chopped basil. Adjust seasoning with salt and pepper to taste.

Serve

Ladle the bisque into bowls and serve hot, optionally garnished with additional basil.
