Make the Filling
In a large bowl, combine ground pork, green onions, garlic, ginger, soy sauce, sesame oil, salt, and pepper. Mix until well combined.

Fill the Dumplings
Place a teaspoon of filling in the center of each dumpling wrapper. Moisten the edges with water, fold the wrapper over the filling, and press to seal tightly.

Pan-Fry the Dumplings
In a large skillet, heat a tablespoon of oil over medium-high heat. Add the dumplings in batches and fry until the bottoms are golden brown. Add a splash of water (about 1/4 cup), cover, and steam for 5-7 minutes until cooked through.

Serve hot with sriracha and sesame-ginger soy sauce for dipping.
