Pretzel Preparation
Prepare the Dough
In a bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy. In a large mixing bowl, combine flour and salt. Add the yeast mixture and melted butter, then knead until smooth and elastic (about 5-7 minutes).
Let the Dough Rise
Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.
Shape the Pretzels
Preheat the oven to 450°F (230°C). Once risen, punch down the dough and divide it into 8 equal pieces. Roll each piece into a long rope and shape it into a pretzel.
Boil and Bake
In a large pot, bring 10 cups of water and the baking soda to a boil. Boil each pretzel for about 30 seconds on each side. Remove and place on a baking sheet lined with parchment paper. Sprinkle with coarse sea salt.
Bake the Pretzels
Bake in the preheated oven for 12-15 minutes or until golden brown. Remove from the oven and let cool slightly before serving.
