Prepare the Ingredients

In a large skillet, heat a tablespoon of oil over medium heat. Add the diced chicken and smoked sausage, cooking until browned, about 5-7 minutes.

Cook the Vegetables

Add the onion, bell pepper, celery, and garlic to the skillet. Sauté until the vegetables are softened, about 5 minutes.

Add Rice and Seasoning

Stir in the rice, chicken broth, cajun seasoning, black pepper, and salt. Bring to a boil, then reduce heat to low and cover. Cook for about 20 minutes, or until the rice is tender and the liquid is absorbed.

Scramble the Eggs

In a separate pan, scramble the eggs with a pinch of salt and pepper until fully cooked. Set aside.

Combine Ingredients

Once the rice mixture is done, fluff it with a fork. Gently fold in the scrambled eggs and shredded cheddar cheese until melted and combined.

Serve hot over a bed of hashbrowns or grits, and if desired, top with baby kale.
