Chowder Ingredients
Method
Chowder Preparation
Sauté the Aromatics
In a large pot, heat the olive oil over medium heat. Add the diced onion, celery, and red bell pepper. Sauté for about 5-7 minutes until the vegetables are softened.
Add Garlic and Sausage
Stir in the minced garlic and Andouille sausage. Cook for another 3-4 minutes until the sausage is browned.
Combine the Rest of the Ingredients
Add the corn, chicken broth, thyme, bay leaf, salt, and black pepper to the pot. Bring the mixture to a boil.
Simmer the Chowder
Once boiling, reduce the heat to low and let it simmer uncovered for about 15 minutes.
Add Shrimp and Cream
Stir in the shrimp and heavy cream. Cook for an additional 5 minutes, or until the shrimp are cooked through and pink.
Season and Serve
Adjust seasoning with cayenne pepper, salt, and pepper to taste. Remove the bay leaf before serving. Ladle the chowder into bowls and enjoy!
