Prepare cheese sticks
If using a block of low-moisture mozzarella, cut into 12–16 sticks about 3/4 inch by 3/4 inch by 3 inches. Alternatively, use pre-shredded mozzarella; pack tightly into molds or shape into 12–16 compact rectangular sticks about same size and freeze solid (see freezing step). Place sticks on a parchment-lined tray and freeze for at least 30 minutes.

Make breadcrumb mixture
In a shallow dish combine breadcrumbs, grated Parmesan, Italian seasoning, garlic powder, onion powder, salt, and black pepper. Mix until evenly distributed.

Prepare flour station
Place the all-purpose flour in a separate shallow dish. If using cornstarch to help sealing, whisk it into the flour.

In a medium bowl whisk together the eggs, milk, hot sauce (if using) and salt until smooth and slightly frothy.

Triple-dip breading (recommended)
Working with cheese sticks straight from the freezer, dredge each stick first in the flour (shake off excess), then dip into the egg wash, and finally press into the breadcrumb mixture, coating all sides. For best results, repeat the egg wash and breadcrumb step a second time (egg -> breadcrumbs) to build a thicker shell that helps prevent leaks. Place coated sticks back on the parchment-lined tray and return to freezer for at least 30 minutes (ideally 1–2 hours) so the coating sets.

Heat oil
Pour about 1 to 1 1/2 inches of vegetable oil into a heavy pot or Dutch oven (approximately 1.5–2 cups). Heat oil over medium-high to 350°F (175°C). If you don't have a thermometer, test by dropping a small breadcrumb into the oil—if it sizzles and browns in ~30–40 seconds, it's ready.

Fry the sticks
Fry the mozzarella sticks in small batches (3–4 at a time) for 1.5–2 minutes, turning once, until golden brown. Do not overcrowd the pot or the oil temperature will drop and the cheese may melt through the coating. If sticks brown too quickly before 1.5 minutes, lower heat slightly. Remove with a slotted spoon or spider and drain on a wire rack set over a sheet pan or on paper towels.

Finish and rest
Let fried sticks rest for 1–2 minutes so the coating firms—this allows the cheese center to remain hot but contained. Sprinkle with chopped parsley if desired and serve immediately with warm marinara sauce for dipping.
