    Prepare sauerkraut

    Place the sauerkraut in a fine-mesh strainer and press with the back of a spoon to remove excess liquid. Transfer to a bowl and squeeze with clean hands or the spoon to remove as much moisture as possible. This prevents a soggy sandwich and concentrates flavor.

    Assemble sandwiches

    Lay out four slices of marble rye. Spread about 1 tablespoon of Thousand Island dressing evenly on each slice. If using Dijon, spread 1/2 teaspoon on each opposite slice of bread (the side that will contact the meat) for a subtle tang.

    Layer fillings

    On each dressing-coated slice, place 2 ounces (about 1/4 lb divided across 4 sandwiches) of thinly sliced corned beef, distributing evenly. Top the corned beef with 1/4 cup of well-drained sauerkraut, then place two slices of Swiss cheese over the sauerkraut. Cap each with the remaining bread slice, dressing side down.

    Butter bread and heat

    Spread about 1 tablespoon of softened butter on the outside of each top and bottom slice of bread (both outsides) for a golden crust. Heat a large skillet or griddle over medium heat. Place the sandwiches in the skillet, working in batches if needed. Press lightly with a spatula or use a sandwich press. Cook 3–4 minutes per side until the bread is deep golden brown and the cheese is melted. If the bread is browning too quickly before the cheese melts, lower the heat to medium-low and cover the skillet for 1–2 minutes to help the cheese melt through.

    Rest and slice

    Remove sandwiches to a cutting board and let rest 1 minute. Slice each sandwich in half diagonally and serve immediately with your choice of side.

    Potato chips & pickles

    Place a 4 oz portion of potato chips on the plate and add two pickle halves alongside the sandwich for a classic deli combo.

    Mixed greens salad

    Toss 4 cups of mixed greens with 2 tablespoons of vinaigrette just before serving. Plate the greens next to the sandwich as a lighter side option.
