Wash and cut
Wash the potatoes under cold running water. Peel if preferred (peeling is optional). Cut each potato into 1/4- to 3/8-inch thick sticks: trim ends, slice lengthwise into 1/4–3/8-inch slabs, then stack and cut into sticks. Aim for uniform size for even cooking.

Rinse and soak
Place the cut fries in a large bowl and cover with cold water (about 6 cups). Rinse by agitating the fries with your hands for 30 seconds, then drain and repeat until water runs clearer. Finally, soak the fries in cold water for at least 30 minutes and up to 2 hours (or overnight refrigerated) to remove surface starch. If soaking for more than 30 minutes, add 1 cup of ice to keep water cold.

Dry thoroughly
Drain the soaked fries in a colander and spread them out on clean kitchen towels or paper towels. Pat very dry — moisture on the surface will cause oil splatter and prevent crisping. Allow 10 minutes of air-drying if needed.

Heat oil
Pour 3–4 cups of oil into a heavy-bottomed pot or deep fryer, leaving at least 2 inches of headspace. Attach a thermometer and heat the oil to 325°F (163°C) for the first fry. If you don't have a thermometer, heat on medium until a small piece of potato sizzles gently but not aggressively.

First fry (blanch)
Working in batches (do not overcrowd), carefully lower a portion of the dried fries into the oil. Fry for 4–5 minutes until the exterior is set but not browned — fries should be pale and softened. Use a slotted spoon to transfer fries to a wire rack set over a sheet pan or paper towels to drain. Let fries rest for at least 10 minutes (can cool to room temperature). Repeat with remaining fries. Increase oil temperature to 375°F (190°C) for the second fry while fries rest.

Second fry (crisp)
When oil reaches 375°F (190°C), fry the blanched fries in batches for 2–3 minutes or until golden brown and crisp. Remove with a slotted spoon and drain on a wire rack or paper towels immediately.

Serve
Serve immediately for best texture with ketchup, mayonnaise, or your preferred dip. Leftover fries will soften; re-crisp in a 425°F (220°C) oven for 5–7 minutes if needed.
