Form Patties
Divide the ground beef into two equal portions (about 8 oz each). Gently shape each portion into a round patty about 3/4 inch thick and slightly wider than the bun. Do not overwork the meat. Press a shallow dimple in the center of each patty with your thumb to reduce puffing during cooking.

Season both sides of each patty with kosher salt and freshly ground black pepper. If using, lightly brush each side with Worcestershire sauce (about 1/2 tbs per side) and rub in. Let rest at room temperature for 10 minutes while you prepare buns and toppings.

Prepare toppings by washing lettuce leaves, slicing tomato and onion into 1/4-inch slices, and arranging pickle slices. Set cheese slices near the stove so they are ready to melt.

Heat a cast-iron skillet or heavy frying pan over medium-high heat until very hot (about 3–4 minutes). Add neutral oil and swirl to coat.

Cook Patties
Place patties in the hot skillet and cook undisturbed for 3–4 minutes until a deep brown crust forms. Flip once and cook the second side 2–3 minutes for medium-rare, 3–4 minutes for medium. During the last 60–90 seconds of cooking, place a slice of cheese on each patty and cover the pan with a lid to melt the cheese.

Mix or individually spread condiments: spread 1 tbs mayonnaise and 1 tbs ketchup on the bottom half of each toasted bun, and 1/2 tsp yellow mustard on the top half (adjust to taste).

Oven Fries
For frozen french fries: bake according to package directions (typically 425°F / 220°C for 18–22 minutes), turning once, until golden and crisp. Season with salt when hot.

Simple Mixed Greens
For mixed greens salad: toss 2 cups mixed greens with 1 tbs olive oil, 1 tbs red wine vinegar, pinch of salt and pepper. Serve alongside the burger.

Serve each burger immediately with your chosen side. Let diners add extra condiments to taste.
