Prepare the tomato
Wash the tomato under cool running water. Remove any stem and core. Slice the tomato into 1/4-inch (6 mm) thick rounds, or if you prefer, cut into 1/2-inch (12 mm) dice for a chunkier addition. Pat slices or dice dry with a paper towel to remove excess moisture.

Dress the tomato
Place the sliced or diced tomato in a small bowl. Drizzle the extra-virgin olive oil and the lemon juice over the tomato pieces so they are evenly coated.

Season
Sprinkle the fine sea salt evenly over the tomato, then grind the freshly ground black pepper on top. Gently toss with a fork or spoon to distribute the seasoning without bruising the tomato.

Add herb (optional)
If using basil, stack the leaves, roll tightly, and chiffonade (thinly slice) them. Scatter the chiffonaded basil over the dressed tomato and give a final gentle toss.
