    Prep

    Remove bacon from the refrigerator and let it sit at room temperature for 5–10 minutes while you prepare equipment. This helps the bacon cook more evenly.

    Preheat oven and prepare pan

    Preheat the oven to 400°F (200°C). Line a rimmed baking sheet with foil for easier cleanup and place a wire rack on the sheet if you want crispier, evenly cooked bacon. If you don't have a rack, you can place the bacon directly on the foil.

    Arrange bacon

    Lay the bacon slices in a single layer on the rack or foil without overlapping. If using a rack, place the fattier sides outward so fat drips off and bacon crisps evenly. Lightly sprinkle the bacon with the measured black pepper for a simple seasoning.

    Bake

    Put the baking sheet on the middle oven rack. Bake for 15–20 minutes, checking at 12 minutes for thinner slices and at 15 minutes for thick-cut. Total time depends on thickness and desired crispness: 15–18 minutes for medium-crisp, 18–22 minutes for very crisp. Rotate the pan once at about halfway for even browning if your oven has hot spots.

    Remove and drain

    When bacon reaches desired crispness, remove the pan from the oven. Using tongs, transfer slices to a plate lined with paper towels to absorb excess fat. Let rest 1–2 minutes; bacon will crisp slightly more as it cools.

    If you want sweet-glazed bacon, brush one side of each hot bacon slice lightly with maple syrup immediately after transferring to the paper towel-lined plate so it adheres and sets slightly.
