Method

Pizza - 14" One-Topping

    Preheat and prepare dough

    Preheat oven to 500°F (260°C) with a pizza stone or inverted baking sheet on the middle rack for at least 30 minutes. Lightly flour a work surface with the all-purpose flour. Stretch or roll the dough into a 14-inch round, leaving a slightly thicker rim for the crust. Transfer to a pizza peel or an inverted baking sheet dusted with a little flour or cornmeal.

    Assemble pizza

    Brush the dough rim lightly with 1 teaspoon of olive oil. Spread the pizza sauce evenly over the dough, leaving the 1/2-inch edge. Sprinkle 2 3/4 cups of shredded mozzarella evenly over the sauce. Arrange your chosen topping evenly across the cheese (about 20 pepperoni slices or equivalent). Sprinkle oregano, salt and cracked black pepper over the top.

    Bake

    Slide the pizza onto the hot stone or sheet and bake for 8–10 minutes, rotating halfway through if your oven has hot spots, until the crust is golden and cheese is bubbling with a few brown spots.

    Finish

    Remove pizza from oven and let rest 2–3 minutes. Drizzle remaining olive oil over the crust if desired, slice into 8 slices and serve.

Wings - 6 Bone-In

    Prepare wings

    If the wings are whole, separate into drumettes and flats and pat dry thoroughly with paper towels. In a bowl, toss wings with salt, black pepper, garlic powder and paprika until evenly coated. Let sit at room temperature for 10 minutes while oven (or fryer) is preheating.

    Cook (choose method)

    Oven method: Preheat oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top. Arrange wings skin-side up on the rack spaced apart. Roast 30–35 minutes, flipping once halfway, until skin is crisp and internal temp reaches 165°F (74°C). Frying method: Heat vegetable oil in a deep pot to 350°F (175°C). Fry wings in batches 8–10 minutes until golden and internal temp 165°F, drain on paper towels. Note: total oil measured in ingredients is to cover frying; if roasting, only a few tablespoons are used for tossing.

    Toss in sauce (optional)

    If using hot wing sauce: melt 1 tbsp butter in a small pan over low heat, stir in 3 tbsp hot sauce until combined and slightly warm. Place cooked wings in a bowl, pour sauce over and toss to coat evenly. Serve immediately alongside pizza and knots.

    Season and serve

    If not saucing, sprinkle a pinch more salt or a light brush of olive oil over wings before serving. Plate 6 wings and serve hot.

Garlic Knots - 6

    Shape knots

    Preheat oven to 400°F (200°C) if baking at same time as wings (or use spare rack while pizza bakes if timing allows). Divide the 1/2 dough ball into 6 equal pieces (about golf-ball size). Roll each piece into a 6–7 inch rope, tie into a loose knot, tucking ends underneath to hold shape. Place knots on a parchment-lined baking sheet spaced apart.

    Bake knots

    Brush each knot lightly with olive oil. Bake in preheated oven for 10–12 minutes until golden and puffed. If you prefer to time with pizza, you can bake knots at 500°F for 6–8 minutes on a higher rack—watch closely to avoid over-browning.

    Garlic butter and finish

    While knots bake, melt 3 tbsp butter in a small saucepan over low heat, stir in minced garlic, chopped parsley and 1 tbsp grated Parmesan, and 1/4 tsp salt. Once knots are baked, brush generously with garlic butter on all sides. Optionally sprinkle additional Parmesan and a pinch of parsley. Serve warm with pizza and wings.
