    Rinse and Pat Dry

    Rinse the cleaned soft-shell crabs under cold running water to remove any grit. Shake off excess water and pat each crab thoroughly dry with paper towels inside and out. Place on a tray and chill in the refrigerator for 10–15 minutes while preparing coatings; drier shells crisp better.

    Set Up Breading Station

    In a shallow bowl or plate, whisk together the all-purpose flour, cornmeal, kosher salt, black pepper, paprika and cayenne until evenly combined. In a second bowl, whisk the buttermilk and beaten eggs until smooth. Reserve a clean plate for dredged crabs.

    Heat Oil and Butter

    In a large skillet (10–12 inch) over medium-high heat add the vegetable oil and melt the butter into it. Heat until the oil reaches about 350°F (175°C) or until a small pinch of flour sizzles and browns gently when dropped into the pan. Maintain a steady medium-high heat so crabs can cook through without burning the exterior.

    Dredge Crabs

    Working one crab at a time, press both sides lightly into the flour-cornmeal mixture, then dip into the buttermilk-egg mixture, letting excess drip off, then press again into the dry mixture for a double coating. Shake off excess and transfer to the reserved plate. Ensure claws and belly flap are coated evenly.

    Fry Crabs

    Carefully place 2 crabs at a time (do not overcrowd) into the hot oil, shell side down. Fry 3–4 minutes per side, flipping gently with tongs, until the exterior is golden-brown and the internal temperature of the crab meat reaches 145°F (about 4–6 minutes total depending on crab size). If using smaller crabs, watch closely and reduce time. Adjust heat as needed to keep oil from smoking.

    Drain and Rest

    Transfer cooked crabs to a wire rack set over a baking sheet or to paper towels to drain briefly. Let rest 1–2 minutes so juices redistribute and coating sets. Keep warm in a low oven (200°F / 95°C) if frying in batches.

Finish & Serving

    Plate the fried soft-shell crabs whole or halved. Sprinkle chopped parsley over the top and serve immediately with lemon wedges and tartar sauce or remoulade on the side. For sandwiches: place a fried crab on a toasted roll, spread sauce, add a squeeze of lemon and serve hot.

    Leftovers: refrigerate cooled crabs in an airtight container up to 24 hours and re-crisp in a 375°F (190°C) oven for 6–8 minutes.
