Prep Fruit

Wash and dry
Wash all fruit under cold running water. Pat dry with a clean kitchen towel or paper towels to remove excess moisture.

Prepare apple
Core the apple and dice into roughly 1/2-inch (1.2 cm) pieces. To prevent browning, place the diced apple in a bowl and toss immediately with 1/2 tablespoon of the lime juice from the dressing section.

Slice banana
Peel and slice the banana into 1/4-inch (6 mm) rounds. Keep the banana separate until just before serving if you want to minimize browning.

Prepare grapes and strawberries
If grapes are large, halve them. Hull and quarter the strawberries (or slice, depending on size).

Segment orange and dice kiwi/pineapple
Peel the orange and remove the pith, then segment (supremes) or cut into bite-sized pieces. Peel and dice the kiwi into similar-sized pieces. Cut fresh pineapple into 1/2-inch dice.
Make Dressing

In a small bowl or measuring cup, whisk together the remaining 1 1/2 tablespoons lime juice, 2 tablespoons orange juice, and 1 tablespoon honey until smooth and honey is fully dissolved.

Stir in the chopped mint and a pinch of sea salt. Taste and adjust: add up to 1/2 teaspoon more honey if you prefer sweeter, or an extra 1/2 tablespoon lime/orange juice if you want brighter acidity.
Assemble Salad Cups

Combine all prepared fruit (apple, banana, grapes, strawberries, orange segments, kiwi, pineapple) in a large mixing bowl. Pour the dressing over the fruit.

Gently toss the fruit with a large spoon or salad tongs until evenly coated, taking care not to crush softer fruit like banana and strawberries.

Divide the dressed fruit into 4 serving cups or bowls (about 1 to 1 1/4 cups fruit per cup). If making ahead, reserve banana slices and add them to each cup just before serving to prevent browning.

Sprinkle each cup with a light dusting of ground cinnamon (optional) and top with toasted sliced almonds for crunch. Garnish with a small mint leaf if desired.
