    Rinse the rice: place 2 cups short-grain rice in a fine-mesh strainer or bowl and rinse under cold water, swirling and draining several times until the water runs mostly clear (about 3–4 rinses).

    Soak and drain: After rinsing, let the rice sit, covered with cold water, for 20–30 minutes to hydrate the grains (optional but improves texture). Drain thoroughly.

    Cook the rice: Combine the drained rice and 440 ml water in a rice cooker and cook per the cooker instructions. If using a pot, bring to a boil, reduce to low, cover and simmer 12–14 minutes, then remove from heat and steam, covered, for 10 minutes.

    Finish rice: Fluff the cooked rice with a paddle or fork. If desired, sprinkle 1 tsp rice vinegar over rice and fold gently to gloss the grains. Keep warm until serving.

Beef & Sauce (Gyudon-style)

    Prep aromatics and beef: Peel the yellow onion and slice it thinly into half-moons (about 4 mm / 1/8" thick). Trim and slice the green onions into 1–2 cm pieces, keeping some white and some green. Separate your thinly sliced beef so pieces are not clumped; if frozen, thaw and pat dry.

    Make the sauce base: In a medium saucepan or deep skillet, combine 360 ml dashi, 60 ml soy sauce, 60 ml mirin, 30 ml sake and 1 tablespoon sugar. Whisk briefly to dissolve the sugar.

    Sweat the onions: Heat 1 tsp neutral oil over medium heat in the pan. Add the sliced yellow onion and cook, stirring occasionally, until softened and translucent, about 5–7 minutes. Do not brown heavily.

    Simmer with sauce: Pour the sauce mixture over the softened onions and bring to a gentle simmer over medium heat. Let simmer 3–4 minutes so flavors marry and alcohol cooks off.

    Cook the beef: Add the thinly sliced beef to the simmering sauce in small batches if needed, separating the slices as you add them. Use tongs or chopsticks to gently stir and spread the meat so every slice contacts the hot liquid. Cook until beef is just done, about 1–2 minutes per batch (thin slices cook very quickly).

    Adjust seasoning and reduce: Taste the broth and adjust: add up to 1–2 tsp sugar or a splash more soy if you prefer sweeter or saltier. If the sauce seems thin, simmer uncovered 2–3 minutes more to reduce slightly. Remove from heat and mix in the white parts of the sliced green onion, reserving green tops for garnish.

Assembly & Garnish

    Portion rice: Divide the cooked rice into four bowls (about 1/2 cup cooked rice per serving if you want light bowls, or ~1 to 1¼ cups for hearty servings). Recommended servings below reflect 4 bowls.

    Top with beef and sauce: Using a slotted spoon or ladle, transfer beef and a generous amount of the simmering sauce over the rice in each bowl so the rice soaks up some broth. Arrange onions and beef attractively.

    Garnish: Scatter the reserved green onion tops over each bowl. Add a small mound (about 15 g) of pickled red ginger to each bowl. Sprinkle a pinch of shichimi togarashi or toasted sesame seeds if using.

    Serve: Serve immediately while hot. Offer extra pickled ginger and soy or hot sauce at the table.
