Preparation

1. Prepare the Vinaigrette

In a bowl, whisk together the lime juice, honey, salt, and black pepper. Slowly drizzle in olive oil while whisking until emulsified. Stir in chopped basil and set aside.

2. Prepare the Vegetables

Slice the Vidalia onion and grill them until they are soft and have grill marks. In a separate bowl, combine diced tomatoes and avocado, and gently mix them.

Heat olive oil in a large skillet over medium-high heat. Season the tilefish fillets with salt and black pepper. Once the oil is hot, add the fish fillets and sear for about 4-5 minutes per side, or until golden brown and cooked through.

On a plate, arrange the grilled Vidalia onions, spoon the avocado and tomato mixture over the top, place the seared tilefish beside it, and drizzle with the basil-lime vinaigrette.
