Method
French Toast
Prepare the Egg Mixture
In a mixing bowl, whisk together eggs, milk, vanilla extract, ground cinnamon, and sugar until well combined.
Soak the Bread
Dip each slice of brioche bread into the egg mixture, ensuring both sides are coated. Allow to soak for a few minutes.
Brûlée the Top
Sprinkle a thin layer of sugar on top of each slice and use a kitchen torch to caramelize the sugar until bubbly and golden.
Caramel
Add Cream
Carefully add heavy cream to the caramel, whisking continuously until smooth. Remove from heat and let cool slightly.
Milk Sherbet
Chill and Freeze
Pour the mixture into an ice cream maker and churn according to manufacturer's instructions until it reaches a sherbet consistency. Transfer to a container and freeze until firm.
Coffee Anglaise
Prepare the Coffee
Brew coffee and let it cool slightly.
Make the Anglaise
In a saucepan, combine coffee, heavy cream, egg yolks, and sugar. Cook over low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon. Strain and cool.
