Pork Chop Preparation

Prepare the Pork Chops

Season the Duroc pork chops with salt and black pepper on both sides. Lay a slice of prosciutto on each chop, followed by sage leaves. Secure with toothpicks if necessary.

Grill the Pork Chops

Heat olive oil in a grill pan over medium-high heat. Grill the pork chops for about 4-5 minutes on each side, or until cooked through and internal temperature reaches 145°F (63°C). Remove from grill and let rest.

Farro and Vegetable Cooking

Cook the Farro

In a saucepan, bring vegetable broth to a boil. Add the farro, reduce heat to low, cover, and simmer for about 25-30 minutes, or until tender. Drain any excess liquid if necessary.

Sauté the Vegetables

In a separate skillet, add a little olive oil and sauté asparagus, zucchini, and peas for about 5-7 minutes until tender. Stir in capers and preserved lemon. Mix in the cooked farro and combine well.
