Dumpling Preparation

Make the Dumpling Dough

In a mixing bowl, combine the all-purpose flour and water. Knead until a smooth dough forms. Cover and let it rest for 30 minutes.

Prepare the Filling

In another bowl, mix the chopped cabbage, grated carrot, chopped mushrooms, green onions, soy sauce, minced ginger, minced garlic, and sesame oil. Toss well to combine.

Form the Dumplings

Roll out the rested dough on a floured surface to about 1/8 inch thickness. Cut out circles (about 3 inches diameter). Place a tablespoon of filling in the center of each circle. Fold in half and seal the edges, pinching to ensure they are well sealed.

Prepare the Broth

In a large pot, combine the coconut milk, vegetable broth, chopped lemongrass, and kaffir lime leaves. Bring to a simmer and let it cook for about 10 minutes to infuse the flavors.

Cooking

Cook the Dumplings

Add the dumplings to the broth and cook for about 5-7 minutes until they float to the top and are cooked through. Add the chopped bok choy and cook for an additional 2 minutes.

Serve

Ladle the dumplings and broth into bowls. Drizzle with Szechuan chili oil and a squeeze of lime juice before serving.
