Method
Base tare
Combine base liquids
In a small saucepan, combine 1 cup soy sauce, 1/4 cup mirin, 1/4 cup sake, 2 tablespoons granulated sugar, and 1/4 cup water. Stir to dissolve the sugar.
Simmer
Place saucepan over medium heat and bring to a gentle simmer. Reduce heat to low and let simmer for 4–5 minutes, stirring occasionally, until slightly reduced and glossy.
Aromatic / umami boost
Add aromatics
Add 4 smashed garlic cloves, 1 tablespoon thinly sliced fresh ginger, 1 halved shallot, 2 tablespoons bonito flakes, and a 3 cm piece of dried kombu to the simmering base tare. Keep the heat low so liquids do not boil vigorously.
Infuse
Simmer the mixture with aromatics for 8–10 minutes to extract savory flavors. Do not boil vigorously; a gentle simmer is ideal so the kombu doesn't become slimy.
Remove solids
Remove from heat and let cool slightly for 5 minutes. Strain the sauce through a fine mesh sieve into a clean bowl or jar, pressing lightly on the solids to extract liquid. Discard solids (or reserve bonito and kombu for another use).
Spicy components
Prepare chili elements
While the tare is hot but not boiling, whisk in 1 tablespoon chili bean paste (doubanjiang) until fully incorporated. Add 1 tablespoon chili oil (or neutral oil) and 1 thinly sliced fresh red chili (seeds in for more heat, remove for milder). If using, whisk in 1/2 tablespoon gochujang for deeper sweetness and body.
Adjust heat
Taste carefully (it will be hot). If you want more layered heat, add up to another 1/2 tablespoon doubanjiang or an extra 1/4 teaspoon shichimi togarashi. Start small — these condiments concentrate heat and umami.
Finishing & balance
Balance flavors
Once chili components are incorporated and the sauce has cooled to warm, whisk in 1 teaspoon rice vinegar, 1 teaspoon honey (or maple syrup), and 1/2 teaspoon toasted sesame oil. These add brightness, sweetness, and aroma to balance salt and spice.
Add garnish
Stir in 2 tablespoons thinly sliced scallions and 1 teaspoon toasted sesame seeds. If you like a smoother sauce for glazing, briefly blend with an immersion blender or in a countertop blender for 5–10 seconds; for a chunkier sauce leave as-is.
Rest & store
Let the sauce cool completely to room temperature, then transfer to a sterilized jar. Seal and refrigerate. The flavor develops over a day; use within 2–3 weeks refrigerated. Reheat gently before using if you want it warm.
