Make the marinade
In a heatproof bowl or small container combine soy sauce, mirin, sake, water, and sugar. Stir until the sugar dissolves. If using dashi concentrate or a small strip of kombu, add it now for extra umami. Set aside to cool to room temperature.
Bring eggs to temperature
Take eggs from the refrigerator and let sit at room temperature for 10–15 minutes (this reduces cracking and helps even cooking).
Soft-boil the eggs
Bring a medium pot of water to a rolling boil. Reduce the heat so water is at a gentle boil. Using a slotted spoon, lower the eggs into the water. Immediately start timing: cook for 6 minutes for runny custard yolk or 6 minutes 30 seconds for slightly firmer but still jammy yolk. Keep the water at a gentle boil.
Ice bath and peel
While eggs cook, prepare a bowl with ice and cold water. When the timer finishes, transfer eggs to the ice bath and cool completely for at least 5 minutes. Gently crack shells all over and peel under running water to help remove membrane without tearing the whites. Pat eggs dry with paper towel.
Marinate
Place peeled eggs in a sealable container or zip-top bag. Pour cooled marinade over the eggs, ensuring they are fully submerged (use a small plate or folded foil to weigh them down if needed). Seal and refrigerate. Marinate for at least 4 hours, preferably 8–12 hours for deeper color and flavor. For very strong flavor, marinate up to 24 hours.
Finish before serving
Remove eggs from marinade, slice in half lengthwise just before serving. Reserve marinade for other uses (dressings, braised vegetables) or discard after 48 hours.
Assembling the Ramen Bowl
Heat the broth: Bring prepared ramen broth to a gentle simmer in a pot. Keep it hot but not aggressively boiling.
Cook noodles: Cook the ramen noodles according to package instructions (typically 2–4 minutes for fresh, 4–5 minutes for dried) in a separate pot of boiling water. Drain well, shaking off excess water.
Top and garnish: Halve two marinated eggs and place one egg (two halves) on each bowl. Add sliced chashu, menma, sliced green onions, a sheet or two of nori tucked into the side, and a sprinkle of sesame seeds. Serve immediately.
