Prepare the Broth

In a large pot, combine the chicken broth, water, sliced ginger, minced garlic, soy sauce, sesame oil, chopped green onions, salt, and black pepper. Bring to a boil over medium-high heat.

Simmer the Broth

Once boiling, reduce the heat and let it simmer for about 20 minutes to allow the flavors to meld. Strain the broth to remove the ginger and garlic pieces, then set aside.

Make the Filling

In a mixing bowl, combine the ground pork, chopped shrimp, minced garlic, minced ginger, soy sauce, and cornstarch. Mix well until all ingredients are fully incorporated.

Assemble the Wontons

Take a wonton wrapper and place about 1 teaspoon of the filling in the center. Moisten the edges with the beaten egg, fold the wrapper in half to form a triangle, and press to seal. Fold the two corners of the triangle towards each other to form a pouch, and seal again. Repeat with remaining wrappers and filling.

Cook the Wontons

Bring the strained broth back to a gentle boil. Carefully add the wontons into the boiling broth and cook for about 5-7 minutes, or until they float to the surface and are cooked through.

Ladle the soup and wontons into bowls. Garnish with chopped cilantro and a drizzle of chili oil to taste. Serve hot and enjoy!
