Raspberry-Passion Purée

Cook and mash

In a small saucepan, combine 1 cup fresh raspberries, 1/2 cup passionfruit pulp, 2 tablespoons granulated sugar, and 2 tablespoons water. Bring to a gentle simmer over medium heat, stirring occasionally, until the raspberries break down and the mixture is slightly reduced, about 4–6 minutes.

Strain

Remove from heat and let cool 2 minutes. Press the mixture through a fine-mesh sieve into a bowl using the back of a spoon or spatula to extract the smooth purée and seeds-free passion-raspberry liquid. Discard solids. Taste and add up to 1 tablespoon more sugar if you prefer sweeter purée. Cool to room temperature.

Simple Syrup (if making from scratch)

If you don't have ready simple syrup, make it now: combine 1/2 cup sugar and 1/2 cup water in a small saucepan. Bring to a simmer, stirring until sugar dissolves. Cool to room temperature. This yields ~3/4 cup; use 3 tablespoons for the lemonade and reserve the rest refrigerated for another use.

Meyer Lemonade

Juice enough Meyer lemons to yield 1 cup (about 4–5 lemons). Strain the juice to remove pulp and seeds. In a pitcher, combine the strained Meyer lemon juice, 3 cups cold water, and 3 tablespoons simple syrup (or to taste). Stir to combine and taste; adjust sweetness by adding up to 1–2 tablespoons more syrup if desired.

Chill the lemonade in the refrigerator for 10–15 minutes if time allows, or proceed to assemble over ice immediately.

Assemble & Serve

Fill four glasses with ice (about 1/2 cup ice per glass). Add 1/4 cup (about 2 tablespoons) of the raspberry-passion purée to each glass — you can spoon it in so it settles at the bottom for a layered look.

Pour 1 cup of the Meyer lemonade into each glass (or to fill), gently stirring once or leave layered for a gradient effect. Taste and add more simple syrup to individual glasses if needed.

Garnish each glass with a lemon slice, 2 fresh raspberries, and a mint sprig. Optionally, lightly muddle a raspberry in the glass before adding lemonade for extra fruit intensity.

Serve immediately with a straw or stirrer so guests can mix the purée into the lemonade as they like.
