Prep bread and cheese
If using, lightly spread mayonnaise on one side of each bread slice (this gives a crisp, golden exterior similar to butter). Place two slices of cheese on the unbuttered side of one bread slice. If using tomato or ham, lay them on top of the cheese, then top with the second slice of cheese (or directly place the second bread slice, mayonnaise/butter side out).
Butter the bread
Spread the unsalted butter evenly on the outside of each bread slice if you did not use mayonnaise. Make sure the butter covers the entire surface to help the bread brown evenly.
Flip and finish
Carefully flip the sandwich and cook the second side for 2 to 3 minutes, pressing gently. If the bread is browning before the cheese melts, reduce the heat and cover the pan with a lid for 30–60 seconds to trap heat and help the cheese melt.
Slice and serve
Remove the sandwich from the pan and transfer to a cutting board. Let rest for 30 seconds, then cut in half diagonally (or down the middle). Serve warm. For children, let it cool slightly to avoid burns.
