Wash and slice

Rinse the cucumber, tomatoes, and lettuce under cold water. Pat dry. Slice the cucumber into thin rounds or half-moons (about 1/8–1/4-inch thick). Core and dice the tomatoes into roughly 1/2-inch pieces. Tear the lettuce into 4 equal-sized leaves per tortilla so each wrap gets one leaf.

Drain pickles

If the pickled vegetables are very wet or in large pieces, drain them in a small sieve and pat lightly with paper towel. If needed, slice larger pickles into 1/4-inch strips so they are easy to bite through in the wrap.

Assemble Wraps

Warm tortillas (optional)

Warm each flour tortilla for 10–15 seconds per side in a dry skillet over medium heat or 15–20 seconds wrapped in a damp towel in the microwave. Warming makes them more pliable and prevents tearing.

Spread hummus

Lay one warmed tortilla flat. Spoon about 3 tablespoons (approximately 3 3/4 tablespoons across 4 tortillas equals the 1.5 cups total) of hummus into the center of the tortilla. Using the back of the spoon or an offset spatula, spread the hummus into a 6-inch oval, leaving a 1-inch border around the edge.

Layer vegetables

Place one torn lettuce leaf on top of the hummus. Evenly distribute sliced cucumber (about 6–8 slices), diced tomato (about 2–3 tablespoons), and 3/4 ounce (about 2 tablespoons) of pickled vegetables over the hummus and lettuce on each tortilla.

Add feta and seasoning

Sprinkle about 2 tablespoons (roughly 0.125 cup) of crumbled feta on each assembled tortilla. Drizzle each wrap with about 1/2 tablespoon olive oil and a little lemon juice (about 1/4 tablespoon). Season each with a light pinch of salt (about 1/8 tsp), a grind of black pepper, and a sprinkle of dried oregano if using.

Roll & Serve

To roll, fold the bottom edge of the tortilla up over the fillings, then fold in the left and right sides toward the center and continue rolling tightly until sealed. If desired, wrap in parchment or foil to hold shape. Repeat for remaining tortillas.

Slice each wrap in half on the diagonal and serve immediately. Estimated to serve 4. Optionally serve with extra hummus or a side salad.
