Mix dry ingredients

In a medium bowl whisk together the flour, sugar, baking powder, and salt until evenly combined.

Combine wet ingredients

In a separate small bowl or measuring cup whisk the milk, half an egg (beat one egg in a small bowl and use roughly half — about 1 tablespoon beaten egg) or substitute with 1 tablespoon yogurt if you prefer, melted butter, and vanilla until smooth.

Pour the wet mixture into the dry ingredients and stir gently until just combined. A few small lumps are fine — do not overmix. Batter should be slightly thick but pourable; if too thick, add 1–2 teaspoons milk.

Bacon

Preheat the oven to 200°C (400°F) and line a rimmed baking sheet with foil. Arrange the bacon slices in a single layer. Lightly season with black pepper.

Bake for 12–16 minutes, turning once if desired, until bacon is crispy and browned to your liking. Thicker slices may take longer. Remove to a paper towel–lined plate to drain and keep warm. Reserve the bacon fat on the tray; optionally spoon a little into the pancake pan for extra flavor.

Cook pancakes and finish

Heat a nonstick skillet or griddle over medium heat. Add 1/2 tablespoon butter and tilt to coat the surface. Reduce heat to medium-low so pancakes cook without burning.

For mini pancakes, spoon 2 to 3 tablespoons of batter per pancake onto the hot surface (you should get two mini pancakes per serving; this recipe makes two mini pancakes and extra batter — use remaining batter for small test pancake or freeze). Cook until bubbles form across the surface and edges look set, about 1–2 minutes.

Flip carefully with a spatula and cook the second side 45–90 seconds more until golden and cooked through. Transfer to a warm plate and keep in the oven (very low) or cover loosely with foil to stay warm while you cook any remaining batter.

If desired, reheat the cooked bacon for 30 seconds in the microwave or briefly on the griddle to restore crispness before serving.

Plate two mini pancakes per serving alongside three slices of crispy bacon. Top pancakes with a small pat of butter, dust with powdered sugar if using, and serve with maple syrup on the side for drizzling.
