Bagel Crisps
Prepare bagels
Slice the 4 everything bagels horizontally into 1/4-inch thick rounds. If bagels are very soft, let them sit uncovered for 10–15 minutes to dry slightly; this helps achieve a crispier fry.
Heat oil
In a heavy skillet or deep frying pan, add about 2 cups vegetable oil (enough to come roughly 1/3–1/2 inch up the sides). Heat over medium-high until the oil reaches 350°F (175°C) or a small piece of bread sizzles and browns in about 30–40 seconds.
Fry bagel slices
Working in batches to avoid overcrowding, carefully add bagel rounds in a single layer. Fry 1–1.5 minutes per side, or until golden brown and crisp. Use tongs to flip. Adjust heat to maintain a gentle sizzle (about 325–350°F).
Drain and season
Transfer fried bagel crisps to a paper towel–lined baking sheet to drain. While still warm, sprinkle with kosher salt (about 1 tsp total) and freshly ground black pepper (about 1/2 tsp). Let crisps cool and crisp further for 5–10 minutes.

Jalapeño Cream Cheese Dip
Soften and combine base
In a medium bowl, add 8 oz softened cream cheese, 1/4 cup sour cream, and 2 tablespoons mayonnaise. Beat with a whisk or use a hand mixer on low until smooth and homogenous.
Add aromatics and seasoning
Fold in the finely minced seeded jalapeño, chopped scallion greens, 1 teaspoon lemon juice, 1/2 teaspoon minced garlic, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Taste and adjust salt or jalapeño heat as desired. If you prefer more heat, retain some jalapeño seeds or add a pinch of cayenne.
Chill and garnish
Cover the dip and refrigerate at least 20 minutes to let flavors meld. Before serving, sprinkle about 1 teaspoon everything bagel seasoning on top (optional). Transfer to a serving bowl.
Serve the dip chilled alongside the warm or room-temperature bagel crisps and prepared vegetable sticks. Use bagel crisps for scooping, or alternately spread dip on crisps and top with a small piece of celery or carrot for a composed bite.
