Basic Batter (makes 3 mini pancakes)

Method
Basic Batter (applies to all flavors)
Prepare dry ingredients
In a small bowl, whisk together 0.5 cup all-purpose flour, 0.5 tsp baking powder, 0.5 tsp granulated sugar, and 0.125 tsp fine salt until evenly combined.
Combine wet ingredients
In a separate bowl, beat 0.5 of a large egg lightly, then whisk in 3 tbs whole milk, 1.5 tbs melted unsalted butter (cooled slightly), and 0.25 tsp vanilla extract until smooth.
Make batter
Pour the wet ingredients into the dry ingredients and stir gently until just combined. A few small lumps are fine. The batter should be thick but pourable. If too thick, add up to 1 tsp milk; if too thin, sprinkle a touch more flour (about 1/2 tsp).
Cook pancakes
For each mini pancake, spoon about 1/4 cup (roughly 4 tbs) batter onto the skillet, spacing them to allow spreading. Cook until small bubbles form and edges look set, about 1.5–2 minutes, then flip and cook 30–60 seconds more until golden and cooked through. You should get three mini pancakes from this batter.
Carrot Variation (adds into batter before cooking)
Fold into the prepared batter: 2 tbs finely grated carrot, 0.125 tsp ground cinnamon, and 1 tsp finely chopped walnuts (optional). Stir gently to distribute evenly. Proceed to heat pan and cook as directed in Basic Batter.
Monkey Variation (adds into batter before cooking)
Fold into the prepared batter: 2 tbs mashed ripe banana and 1 tsp smooth peanut butter. Mash the banana finely so it incorporates; peanut butter may be warmed slightly to loosen then whisked in. Stir until just combined and cook following Basic Batter instructions. Note: batter may brown slightly faster—use medium-low heat.
Confetti Variation (adds at pour time)
Stir 1.5 tsp rainbow sprinkles into the batter gently, or sprinkle sprinkles onto the pancakes immediately after pouring each 1/4-cup portion onto the skillet so the colors stay bright. Cook as directed in Basic Batter.
Finishing & Serving
Notes: Choose one variation per order (Carrot, Monkey, or Confetti). For allergy considerations, omit walnuts for carrot variation or use seed butter instead of peanut butter for monkey variation.
