Method
Avocado whipped cream
Prepare avocado
Halve 1 ripe avocado, remove the pit and scoop the flesh into a medium bowl.
Whip
Add 2 tablespoons Greek yogurt, 1 teaspoon lime juice, 1 teaspoon olive oil, 1 teaspoon salt, and 1 teaspoon freshly ground black pepper to the bowl. Using a fork or an electric hand mixer, mash and whip until smooth and creamy, with no large lumps. Adjust texture with an extra 1/2 teaspoon yogurt if needed.

Prep tomato and cilantro
Dice the medium tomato into small 1/4-inch pieces, removing excess seeds and juice if the tomato is very watery. Roughly chop and lightly pack 2 tablespoons cilantro leaves; set both aside.
Season toppings
In a small bowl, toss the diced tomato with 2 teaspoons of the chopped cilantro, 1/4 teaspoon flaky sea salt, and 1/4 teaspoon freshly ground black pepper. This seasons the tomato so it complements the whipped avocado cream.
Bread and assembly
Spread whipped avocado
Using a spoon or small offset spatula, spread a generous layer (about half of the whipped avocado cream) evenly over each warm sourdough slice so the surface is coated and slightly peaked.
Finish and season
Sprinkle everything bagel seasoning evenly over both toasts (about 1/2 teaspoon per slice, total 1 tsp). Add a light pinch of flaky sea salt if desired, and finish with a tiny squeeze of lemon or lime wedge over each toast for brightness (optional). Serve immediately.
