Prepare the Shrimp
Rinse the shrimp under cold water and pat them dry with paper towels.
Set Up Breading Station
In three separate shallow dishes, place the flour in one, beaten eggs in the second, and a mixture of coconut flakes, breadcrumbs, salt, and black pepper in the third.
Bread the Shrimp
Dredge each shrimp in the flour, shaking off excess. Dip into the beaten eggs, then coat with the coconut-breadcrumb mixture, pressing gently to adhere.
Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Shrimp
Working in batches, add the breaded shrimp to the hot oil and fry until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.
Serve
Serve the crispy coconut shrimp warm with sweet chili sauce on the side for dipping.
