Preparation Instructions
Marinate the Catfish
In a bowl, soak the catfish fillets in buttermilk for at least 30 minutes.
Prepare the Breading
In a shallow dish, combine flour, cornmeal, paprika, cayenne pepper, salt, and black pepper.
Bread the Catfish
Remove catfish from buttermilk, letting excess drip off. Dredge each fillet in the flour mixture until well coated.
Fry the Catfish
In a large skillet, heat vegetable oil over medium-high heat. Fry the catfish fillets for 3-4 minutes on each side or until golden brown and crispy. Drain on paper towels.
Assemble the Po' Boys
Slice the French bread in half and lightly toast if desired. Spread remoulade sauce on the inside, then layer with lettuce, tomato slices, and fried catfish fillets.
Serve
Close the sandwich and serve immediately with extra remoulade on the side.
