In a large brew kettle, heat 6 gallons of water to 165°F. Add the pale malt and crystal malt, stirring well to avoid clumps. Maintain the temperature at 152°F for 60 minutes.

Mashing

After mashing, remove the grains and bring the wort to a boil. Once boiling, add 1 oz of Cascade hops and boil for 60 minutes.

Boiling

15 minutes before the end of the boil, add the remaining 1 oz of Cascade hops and the 1 oz of Citra hops.

Adding Flavor Hops

After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches around 70°F.

Cooling the Wort

Transfer the cooled wort to a sanitized fermenter. Pitch the yeast and seal with an airlock. Ferment at 68-72°F for 1-2 weeks.

Fermentation

Once fermentation is complete, dissolve the priming sugar in a small amount of water and add it to the beer before bottling. Bottle the beer and cap the bottles.

Bottling

Allow the bottles to condition at room temperature for 1-2 weeks before chilling and enjoying.
