In a large brew kettle, heat 5 liters of water to 70°C (158°F). Add the pale and crystal malts, stirring to combine. Maintain the temperature for 60 minutes.

Mashing

After mashing, drain the liquid (wort) and rinse the grains with hot water (around 75°C or 167°F) to collect more sugars. Aim for around 7 liters of wort.

Sparging

Bring the wort to a boil. Add the Cascade hops and boil for 60 minutes. Add the Amarillo hops in the last 15 minutes of the boil.

Boiling

Cool the wort quickly using a wort chiller or ice bath until it reaches room temperature.

Cooling

Transfer the cooled wort to a sanitized fermenter and pitch the yeast. Seal with an airlock and ferment for 1-2 weeks at around 18-22°C (64-72°F).

Fermentation

Once fermentation is complete, dissolve the priming sugar in a small amount of boiling water and add it to the beer. Bottle the beer using sanitized bottles and caps.

Bottling

Allow the bottled beer to condition for at least 2 weeks at room temperature before refrigerating and enjoying.
