Preparation Directions
Activate the Yeast
In a small bowl, combine the warm water and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.
Prepare the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center, and pour in the activated yeast mixture and olive oil. Mix until a sticky dough forms.
Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. If the dough is too sticky, add a little more flour as needed.
First Rise
Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
Shape and Add Herbs
Once risen, punch down the dough and transfer it to a greased baking sheet. Spread it out with your fingers to about 1 inch thick. Sprinkle the chopped marjoram, thyme, and sage evenly over the top, pressing them into the dough gently.
Second Rise
Cover the dough again with a cloth and let it rise for an additional 20-30 minutes.
Preheat and Bake
Preheat the oven to 425°F (220°C). Once the dough has risen, use your fingers to create dimples all over the surface. Sprinkle the coarse sea salt on top. Bake for 20-25 minutes, or until golden brown.
Cool and Serve
Remove the focaccia from the oven and let it cool slightly on a wire rack. Cut into squares and serve warm or at room temperature.
