Chocolate Mousse Preparation

Melt the Chocolate

In a heatproof bowl, melt the dark chocolate over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.

Prepare the Egg Mixture

In a separate bowl, whisk the egg yolks with the sugar until pale and creamy. Gradually add the melted chocolate and mix until fully combined.

Beat the Egg Whites

In another bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gently fold the egg whites into the chocolate mixture in three additions.

Whip the Cream

In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form. Gently fold the whipped cream into the chocolate mixture until fully combined.

Chill the Mousse

Spoon the mousse into serving dishes and refrigerate for at least 2 hours, or until set.

Once set, top the chocolate mousse with strawberries, blueberries, streusel crumble, and a dollop of whipped cream before serving.
