Prepare Home Fries

Dice the potatoes and boil them for about 10 minutes until tender. Drain and pat dry. In a skillet, heat olive oil over medium heat, add the potatoes, season with salt and pepper, and fry until golden and crispy, about 5-7 minutes.

Cook Eggs

In another skillet, cook the eggs to your liking (poached, fried, or scrambled). Season with salt and pepper.

Prepare Tortillas

In a separate skillet, warm the tortillas until they are nice and crispy, about 1-2 minutes on each side.

Assemble the Dish

On each plate, spread a layer of refried beans, top with a crispy tortilla, add the ranchero sauce, place the cooked eggs on top, and garnish with sliced avocado, queso fresco, and radish slices. Serve with home fries on the side.
