Prepare the Fries

Begin by washing and cutting the potatoes into fries. Soak them in cold water for at least 30 minutes to remove excess starch.

Fry the Potatoes

Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Drain the potatoes and pat them dry. Fry in batches until golden brown and crispy, about 4-5 minutes per batch. Remove and place on paper towels to drain excess oil. Season with salt and pepper.

Make the Crab Fondue

In a saucepan over medium heat, combine cream cheese, heavy cream, minced garlic, and Old Bay seasoning. Stir until the cream cheese is melted and the mixture is smooth.

Add the Crab

Gently fold in the crab meat and shredded cheddar cheese. Cook until the cheese is melted and the mixture is warm. Adjust seasoning with salt and pepper to taste.

Serve

Serve the hot fries topped with the crab fondue and garnish with chopped chives.
